oh yeah, i forgot to post this in my last entry.
got this recipe from the forum at calorie count.
cottage cheese oatmeal pancakes
(these do not taste like cottage cheese, thank god.)
- 4 egg whites
- 1 tsp vanilla
- 1/2 cup of nonfat cottage cheese
- 1/2 cup of oatmeal (oats, not cooked)
put all the items in a blender in the order that they appear (i use a hand mixer). blend. pour into a heated nonstick pan (spray with pam for best results). heat until small bubbles appear on top, then flip. it doesn’t take long, maybe two minutes.
serve with sugar free syrup, berries, or peanut butter. they are super filling and loaded with protein, and they taste great. makes about 6 pancakes. serving size is 3 pancakes but you can freeze the leftovers.
